The judging panel includes leading UK chefs John Campbell, executive chef at the Woodspeen in Newbury; Atul Kochhar, chef and managing director of Benares Restaurant & Bar, London; Alfred Prasad, director cuisine and executive chef, Tamarind Collection and Zaika, London; and Andre Garrett, executive head chef at Cliveden House in Taplow.
The judges will be looking for clear evidence of sustainable produce, successful fish and shellfish promotion on menus, excellent levels of product knowledge both front and back of house, and examples of how younger customers are encouraged to eat fish and shellfish.
Following an initial shortlisting judging process, the Top 10 restaurants will then be visited by a mystery judge, who will determine a final top five listing of leading restaurants, which will be revealed in early June 2015.
All five finalist restaurants will be invited on an all-expenses paid study trip to Brixham, Devon to learn about the catching, processing and supply of seafood from south west England to other parts of the UK – meeting a range of key industry players and experiencing some of the world's freshest and greatest tasting seafood. In addition to some silverware, in the form of a winner's trophy for the top restaurant, there will also be a range of other prizes up for grabs, including attendance at a seafood masterclass cookery course at Billingsgate Seafood Training School, prize vouchers to be redeemed against cookery equipment, along with signed copies of cookery books. The shortlisted restaurants will also be invited to attend an awards ceremony in London in June 2015 at which the overall national winner will be announced.
The closing date for the submission of entries is 20 March 2015.
